Scrambling for lunch

Lunch can be a tricky meal in my house. Mainly because I’m in a hurry to feed myself and my hangry kids before the three of us turn on each other. A quick, healthy and versatile lunchtime option is an egg white scramble. I load mine with lots of greens, a protein and egg whites. For lunch today, I threw in some leftover quinoa, veggies and olive tapenade from last night’s dinner, diced up some smoked turkey and added about 1/4 cup of egg whites. It was fast, filling and delicious.

Of course my kids weren’t interested in the scramble so I resorted to another fast option. Oatmeal. I guess we’re brunching today!
