Salads are a lot like outfits. Staples are important, but accessories are what make (or break) the ensemble. Take Exhibit A: my 2 year old Reece who dresses and accessorizes herself. I mean really, without the tutu, hair extensions, and Uggs, she would just be a darling toddler with perfect, unruly hair.
It’s similar with salad; the base is critical (iceberg is off-limits, ok?), but the add ons are what really seal the deal. As with fashion, salad changes with the season. If you’re using seasonal ingredients, you won’t likely be eating the same salad in December as in June. Regardless of the season, there are SO many options to make unique and absolutely delicious salads.
This is what my salad looked like today:
My December Salad
- Base: Arugula
- Accessories: avocado, pear, roasted turkey breast, and craisins
- Dressing: lemon juice (I use a Meyer sweet lemons), ground pepper, and extra virgin olive oil
The salad was simple, healthy, filling and tasty. Reece even shared a few bites which was the true test. When is the last time you saw a 2 year old eat arugula, guys? Yeah, that’s what I thought.
